Hello everyone!
Here is my absolute favorite fall cookie recipe. These pumpkin crackle cookies are simple to make and oh, so delicious! They were definitely a hit at my house!
Ingredients:
- 2 1/2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp pumpkin spice
- 1 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup softened butter
- 1 1/4 cup white granulated sugar
- 1 cup pumpkin
- 1 egg
- 1 tsp vanilla
- 1 cup powdered sugar
Instructions:
Step 1: Preheat oven to 350F. Spray cookie sheet with non-stick cooking spray, set aside.
Step 2: In a large bowl, whisk together all dry ingredients from the flour to the salt.
Step 3: In a separate medium bowl, mix sugar and butter together until creamy, then slowly stir in pumpkin.
Step 4: Add egg and vanilla to the pumpkin mixture and mix well.
Step 5: Slowly add dry ingredients into the wet ingredients until a thick batter forms.
Step 6: Pour powdered sugar into a wide bowl or plate. Scoop about a tablespoon of batter onto the bowl of powdered sugar and roll it around, coating the whole cookie. Place them about 1 1/2 to 2 inches away from each other on the prepared cookie sheet.
Step 7: Bake 6-8 minutes, not over baking them. Allow to cool on wire rack.
